– 8-10 medium-sized tomatoes, or about 5 cups of chopped tomatoes

– 1 teaspoon of salt
– 1 teaspoon of sugar
– 1/2 teaspoon of black pepper
– 1/4 cup of fresh basil, chopped (or 1 teaspoon of dried basil)
– 1/4 cup of fresh parsley, chopped (or 1 teaspoon of dried parsley)

Instructions:
1. Start by preparing the tomatoes. If you’re using fresh tomatoes from your garden, you’ll need to blanch them first to make them easier to peel. To do this, bring a large pot of water to a boil and prepare a large bowl of ice water. Using a small knife, score an “X” on the bottom of each tomato. Place the tomatoes in the boiling water for about 30 seconds, then immediately transfer them to the ice water. Once they’ve cooled, the skins should easily peel off. Once peeled, chop the tomatoes into small pieces and set aside.

2. In a large saucepan, heat the olive oil over medium heat. Add the chopped onion and cook until it becomes translucent, about 5 minutes. Add the minced garlic and cook for an additional 1-2 minutes, being careful not to let it burn.

3. Add the chopped tomatoes to the saucepan, along with the salt, sugar, and black pepper. Stir to combine, then let the sauce simmer over low heat for about 30 minutes, stirring occasionally.

4. After the sauce has simmered for 30 minutes, add the chopped basil and parsley. Let the sauce cook for an additional 10 minutes to let the flavors meld together.

5. Once the sauce has finished cooking, you can use it right away or store it in an airtight container in the refrigerator for up to a week. You can also freeze the sauce for longer storage.
