Carefully lower the tomatoes into the boiling water and blanch them for about 1 minute. Using a slotted spoon, transfer the tomatoes to a bowl of ice water to stop the cooking process. Once cooled, peel off the skins, chop the tomatoes, and set them aside.

2. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for an additional minute.

3. Add the chopped tomatoes to the pot, along with the salt, pepper, oregano, basil, and thyme. Stir well to combine all the ingredients.
