– 1/2 teaspoon black pepper

Instructions:

1. Prepare the tomatoes: Fill a large pot with water and bring it to a boil. Fill a large bowl with ice and water. Cut an “X” on the bottom of each tomato. Once the water is boiling, carefully place the tomatoes in the water for 1-2 minutes, then transfer them to the ice water. Once cool, peel off the skins and remove the cores. Roughly chop the tomatoes and set aside.

2. In a large pot, heat the olive oil over medium heat. Add the diced onions and sauté until they are soft and translucent, about 5 minutes. Add the minced garlic and cook for an additional 1-2 minutes, being careful not to let it burn.

3. Add the chopped tomatoes to the pot, along with the dried oregano, dried basil, salt, black pepper, and crushed red pepper flakes. Stir to combine and bring the mixture to a simmer. Let it simmer, uncovered, for 1-2 hours, stirring occasionally, until the sauce has thickened and reduced.

4. Stir in the sugar, fresh parsley, and fresh basil. Taste and adjust the seasoning as needed. Remove the pot from the heat and allow the sauce to cool completely.

5. Once the sauce has cooled, ladle it into freezer-safe containers or bags, leaving about an inch of space at the top. Label the containers with the date and place them in the freezer. The sauce will keep for up to 6 months.
