2. Add the chopped tomatoes to the pot and cook, stirring occasionally, until they break down and release their juices, about 20 minutes.

3. Using an immersion blender, puree the tomato mixture until smooth. Alternatively, you can transfer the mixture to a blender and blend until smooth.

4. Add the salt, sugar, oregano, basil, black pepper, and red pepper flakes to the pot. If using, add the red wine. Bring the sauce to a simmer and cook for another 15-20 minutes, until it has thickened to your desired consistency.

7. Process the jars in a boiling water canner for 35 minutes. After processing, carefully remove the jars from the canner and let them cool on a towel-lined countertop.

Once the jars have cooled, check to make sure the lids have sealed properly. You can store the jars in a cool, dark place for up to 12 months.
