Ingredients:
– 10-12 ripe tomatoes, chopped
– 1 onion, chopped
– 3-4 cloves of garlic, minced
– 2 tablespoons olive oil
– 1 teaspoon dried oregano
– 1 teaspoon dried basil
– Salt and pepper to taste
– 1 teaspoon sugar (optional)
– 1/4 cup fresh basil, chopped

Instructions:
1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for an additional 1-2 minutes.

2. Add the chopped tomatoes to the pot, along with the dried oregano and basil. Stir to combine and bring the sauce to a simmer. Let the sauce simmer for 20-30 minutes, stirring occasionally, until the tomatoes have broken down and the sauce has thickened.

3. Once the sauce has thickened, use an immersion blender to blend the sauce until smooth. If you don’t have an immersion blender, you can transfer the sauce to a blender and blend until smooth, then return it to the pot.

4. Season the sauce with salt and pepper to taste. If the tomatoes are particularly acidic, you can add a teaspoon of sugar to balance out the flavors.

5. Finally, stir in the chopped fresh basil and allow the sauce to simmer for an additional 5 minutes to let the flavors meld together.

This fresh tomato spaghetti sauce can be served over your favorite pasta, or used as a base for other dishes like lasagna or pizza. It can also be made in large batches and frozen for later use.
