Score the bottom of each tomato with an “X” and then carefully place them in the boiling water for about 30 seconds. Using a slotted spoon, transfer the tomatoes to the ice water to cool. Once cooled, you can easily peel off the skins.

Next, chop the peeled tomatoes and remove the seeds. Heat the olive oil in a large saucepan over medium heat and sauté the chopped onion and garlic until they are soft and fragrant. Add the chopped tomatoes to the pot and stir to combine. Allow the tomatoes to simmer for about 30 minutes, stirring occasionally.

Process the jars in a boiling water bath for about 35 minutes, and then let them cool completely before storing them in a cool, dark place.
