Ingredients:
– 6 lbs of ripe tomatoes, cored and chopped
– 1 large onion, chopped
– 4 cloves of garlic, minced
– 2 tbsp olive oil
– 1 tsp salt
– 1 tsp sugar
– 1/2 tsp black pepper
– 1/4 cup fresh basil, chopped
– 1/4 cup fresh parsley, chopped

Instructions:
1. Start by blanching the tomatoes to remove the skins. Bring a large pot of water to a boil and prepare an ice bath. Score the bottom of each tomato with an “x” and place them in the boiling water for about 30 seconds, then transfer to the ice bath. Once cooled, peel off the skins and chop the tomatoes.

2. In a large saucepan, heat the olive oil over medium heat. Add the onions and garlic, and sauté until fragrant, about 5 minutes.

3. Add the chopped tomatoes to the saucepan, along with the salt, sugar, and black pepper. Stir well to combine.

4. Bring the sauce to a simmer and let it cook for about 30 minutes, stirring occasionally.

5. Stir in the fresh basil and parsley, and continue to simmer for another 10 minutes.

6. Allow the sauce to cool slightly before transferring it to a blender or food processor. Blend until smooth.

7. If you prefer a chunky sauce, you can skip the blending step and leave the sauce as is.

8. Once the sauce has cooled completely, divide it into freezer-safe containers or bags. Label with the date and freeze for up to 6 months.
