Homemade Spaghetti Sauce with Fresh Tomatoes

Ingredients:
– 10 pounds fresh tomatoes
– 2 large onions, chopped
– 4 cloves garlic, minced
– 1/4 cup olive oil
– 2 tablespoons sugar
– 2 teaspoons salt
– 1 teaspoon black pepper
– 1 teaspoon dried oregano
– 1 teaspoon dried basil
– 1/4 teaspoon crushed red pepper flakes
– 2 tablespoons tomato paste

Instructions:
1. Prepare the tomatoes by blanching them in boiling water for 1-2 minutes, then transferring them to an ice bath to cool. Once cooled, remove the skins and core the tomatoes, then chop them into small pieces.

2. In a large stockpot, heat the olive oil over medium heat. Add the onions and garlic and sauté until softened, about 5 minutes.

3. Add the chopped tomatoes to the pot, along with the sugar, salt, pepper, oregano, basil, and red pepper flakes. Stir to combine and bring the mixture to a simmer.

4. Reduce the heat to low and let the sauce simmer for 2-3 hours, stirring occasionally, until it has thickened.
