– 2 (28-ounce) cans crushed tomatoes
– 1 (6-ounce) can tomato paste
– 1 teaspoon dried oregano
– 1 teaspoon dried basil
– 1 teaspoon sugar
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 1/4 cup fresh parsley, chopped
– 1/4 cup red wine (optional)
– 2 tablespoons olive oil

Instructions:

1. In a large, heavy-bottomed pot, heat the olive oil over medium heat. Add the onions and garlic and cook until they are softened.

2. Add the ground beef and cook until it is browned, breaking it into small pieces as it cooks.

3. Stir in the green pepper and mushrooms and cook for a few minutes until they are softened.

4. Add the crushed tomatoes, tomato paste, oregano, basil, sugar, salt, and black pepper to the pot. If using, pour in the red wine.

5. Bring the sauce to a simmer, then reduce the heat and let it cook for at least 30 minutes, stirring occasionally.

9. Process the jars in a boiling water bath for 35 minutes. Carefully remove the jars from the pot and let them cool on a towel-lined countertop.

10. Once the jars have cooled, check to make sure the lids have sealed properly. If they have, store the jars in a cool, dark place for up to one year.
