Easy canning recipe for delicious meaty spaghetti sauce

What you’ll need:

– 10 lbs of ripe tomatoes, cored and chopped
– 2 lbs of ground beef or Italian sausage
– 2 medium onions, diced
– 4 cloves of garlic, minced
– 1/4 cup of fresh basil, chopped
– 2 tsp of dried oregano
– 1/4 cup of sugar
– 1/4 cup of red wine (optional)
– Salt and pepper to taste
– 8-10 sterilized glass canning jars with lids and bands

Instructions:

1. In a large, heavy-bottomed pot, brown the ground beef or Italian sausage over medium-high heat until fully cooked. Remove the meat from the pot and set aside.

2. In the same pot, add the diced onions and minced garlic. Cook until the onions are translucent, about 5 minutes.

3. Add the chopped tomatoes, fresh basil, dried oregano, and sugar to the pot. Stir to combine, and bring the mixture to a simmer over medium heat.

4. Once the sauce is simmering, reduce the heat to low and let it cook for 1-2 hours, stirring occasionally.

5. If using, add the red wine to the pot and let it cook for an additional 10-15 minutes.

6. Once the sauce is thick and flavorful, season with salt and pepper to taste, and remove it from the heat.

7. While the sauce is still hot, carefully ladle it into the sterilized canning jars, leaving about 1/2 inch of headspace at the top of each jar.

8. Wipe the rims of the jars with a clean, damp cloth, and then place the lids and bands on the jars, tightening the bands just until they are finger-tight.

9. Process the jars in a boiling water canner for 35 minutes. Carefully remove the jars from the canner and let them cool to room temperature.

10. Check the seals on the jars, and store any unsealed jars in the refrigerator for immediate use.
