Ingredients:

– 12 lbs ripe tomatoes, chopped
– 2 large onions, chopped
– 1 head of garlic, minced
– 1/4 cup olive oil
– 1/4 cup balsamic vinegar
– 2 tbsp sugar
– 2 tbsp salt
– 2 tsp dried oregano
– 2 tsp dried basil
– 1/2 tsp red pepper flakes (optional)

Instructions:

1. Prepare the tomatoes by removing the stems and chopping them into chunks. Place them in a large stockpot.

2. Add the chopped onions, minced garlic, olive oil, balsamic vinegar, sugar, salt, oregano, basil, and red pepper flakes to the pot with the tomatoes.

3. Bring the mixture to a boil over medium-high heat, then reduce the heat to low and simmer for 2-3 hours, stirring occasionally, until the tomatoes have broken down and the sauce has thickened.

4. Once the sauce is ready, use an immersion blender to puree it until smooth. Alternatively, you can transfer the mixture to a blender or food processor to puree in batches.

5. While the sauce is simmering, prepare your canning jars by washing them thoroughly and sterilizing them in boiling water for 10 minutes.

6. Ladle the hot sauce into the prepared jars, leaving 1/2 inch of headspace. Wipe the rims of the jars with a clean, damp cloth, then place the lids on top and screw on the bands until they are just fingertip-tight.

7. Process the jars in a boiling water canner for 35 minutes. Carefully remove the jars from the canner and let them cool on a towel-lined countertop for 12-24 hours.

8. Once the jars have cooled, check the seals and store the sauce in a cool, dark place for up to one year.
