One of our most popular vegetable soup creations is our “Garden Harvest Soup”. This soup is chock full of a variety of fresh seasonal vegetables, aromatic herbs, and wholesome grains. It’s not only delicious but also a fantastic way to use up any surplus vegetables from your garden or refrigerator. Here’s the recipe for our Garden Harvest Soup:

Ingredients:

– 1 tablespoon olive oil
– 1 onion, chopped
– 2 carrots, diced
– 2 celery stalks, diced
– 2 cloves of garlic, minced
– 1 zucchini, diced
– 1 yellow squash, diced
– 1 cup green beans, trimmed and cut into bite-sized pieces
– 1 cup corn kernels
– 1 can of diced tomatoes
– 6 cups vegetable broth
– 1 teaspoon dried thyme
– 1 teaspoon dried oregano
– 1 cup quinoa, rinsed
– Salt and pepper to taste

Instructions:

1. In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery and cook until the vegetables are softened, about 5 minutes.

2. Add the garlic, zucchini, yellow squash, green beans, and corn to the pot and cook for another 5 minutes, stirring occasionally.

3. Pour in the diced tomatoes and vegetable broth. Add the thyme and oregano, and season with salt and pepper. Bring the soup to a boil, then reduce the heat and let it simmer for 20 minutes.

4. Stir in the quinoa and simmer for another 15 minutes, or until the quinoa is cooked and the vegetables are tender.

5. Taste and adjust the seasoning as needed before serving.

This Garden Harvest Soup is not only a great way to use up leftover vegetables, but it’s also a fantastic way to get a variety of nutrients in one bowl. It’s a comforting and satisfying meal that is perfect for any time of the year.
